Kefir Chia Pudding

Ingredients:

  • 1/4 cup chia seeds

  • 1 cup kefir (plain or flavoured, as you prefer)

  • 1 tablespoon honey (or more to taste)

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon

  • A pinch of nutmeg

  • 1/2 cup diced seasonal fruits (I used pink currents and strawberries)

  • A handful of granola or Chopped nuts and seeds

Instructions:

  1. In a mixing bowl, combine the chia seeds and kefir. Stir well to evenly distribute the chia seeds. Let the mixture sit for about 15 minutes, stirring occasionally until it thickens.

  2. Add the honey, vanilla extract, ground cinnamon, and a pinch of nutmeg to the chia kefir mixture. Mix until all the ingredients are well incorporated. Taste and adjust the sweetness by adding more honey if desired.

  3. In serving glasses or bowls, layer the chia kefir pudding with the diced seasonal fruits. You can alternate between layers or simply top the pudding with the fruits.

  4. Finish off your autumn creation with a sprinkle of chopped nuts for a delightful crunch and added protein.

  5. Refrigerate the pudding for at least an hour or overnight to allow the flavors to meld together.

  6. Before serving, drizzle a touch of honey on top for an extra burst of autumn sweetness.
